- 1/2 kg Chicken
- as per taste Salt
- 1/2 tsp black pepper
- as required Juice of half lemon
- 3 tbsp curd
- 2 tbsp ginger garlic paste
- For masala paste
- as needed from 2 onions fried brown
- 1 tbsp oil for frying onion
- Handful cashewnuts
- 8-10 almonds
- 100 ml milk
- For fresh cream
- 1-2 tbsp milk cream
- 1 tsp milk
- For curry
- Khada masala
- as required ( cardamoms, cloves, few black peppercorns, bay leaf,
- As needed Small cinnamon stick, shahi zeera, pieces of star anise)
- 4 tbsp oil
- 1 tbsp ghee
- 1 tbsp coriander powder
- 1 tsp cumin powder
- 1 tsp red chili powder
- as required Kasuri methi for garnish (optional)
- As required Fresh green chillies for garnish
- 1 You can add finely chopped
- As required coriander leaves
- as required Water
Instructions to make to make Homestyle mughlai chicken
- Take chicken, add salt, turmeric, black pepper, ginger garlic paste, curd and lemon juice. Mix well. Keep marinated in fridge for 1 hour.



- Soak cashews and almonds in water. Keep aside.
Next place a kadhai, put oil, fry onion slices at slow flame till they are brown.
Do not overfry, or fry at very high flame. Else your masala will taste bitter. Remember this tip.


- As fried onions become cool, put them in a grinding jar with soaked cashews and almonds and milk. Grind into a smooth paste.
Masala is ready. Keep aside.


- Now take khada masala. Heat a kadhai with heavy bottom. Put oil and ghee. As it is heated add the khada masala. Saute for a while.



- Next add into it, the marinated chicken. Mix and let it be on high flame for 3-5 minutes. Then reduce flame to medium and cook for some more time. As, moisture is vaporised, add coriander powder, cumin powder and red chilli powder. Mix all well. If required add little water.



- Now cover and cook at slow flame. As it's almost done, add the prepared masala paste. Mix all well. Cover and continue cooking at slow flame. All flavours combine with each other.



- As it's cooking, take cream of milk, add little milk and blend. Homemade fresh cream is ready.
When chicken is cooked nicely, add fresh cream. Mix and let it cook on open for some more time.


- It's ready.. slit green chillies and add. At this time you can add finely chopped coriander leaves also.



- Transfer to a serving dish, garnish with Kasuri methi and fried onions.
