Ingredients and spices that need to be Make ready to make Chicken Masala:

  1. For marination of chicken
  2. 1/2 kg chicken (bone)
  3. to taste Salt
  4. 1/2 tsp turmeric powder
  5. 1 tsp red chilli powder
  6. 1/2 tbsp coriander powder
  7. 1 tsp cumin powder
  8. 1 tbsp mustard oil
  9. For chicken masala
  10. as required Marinated chicken
  11. 40 ml oil (you can use vegetable oil or mustard oil)
  12. 1 bay leaf
  13. 1/2 tsp cumin seeds
  14. Whole spices
  15. 5-8 cloves garlic
  16. 2 medium size onions
  17. 1 tbsp ginger garlic paste
  18. 1 medium size tomato
  19. 2 fresh green chillies
  20. Handful coriander leaves
  21. 1 tsp chicken masala
  22. Handful curry leaves
  23. 1-2 fresh green chillies

Instructions to make to make Chicken Masala

  1. Wash the chicken well.
    For marination, into the chicken add salt, turmeric powder, red chilli powder, coriander powder, cumin powder and mustard oil. Mix well, cover and keep the chicken for an hour in fridge.
  2. Next place a kadhai with oil. Put bay leaf, cumin seeds and whole spices like cardamoms, cloves, cinnamon stick and black peppercorns. Next add cloves of garlic.
  3. As garlic gets toasted, add slices of onion. Saute till onion becomes brown. Add the marinated chicken.
  4. Mix well. Fry in high flame for 3-4 minutes. Next keep the flame medium and let it get fried. As you find changes in colour of the chicken, make a pocket in the centre. Add ginger-garlic paste there let it get fried there itself. As the raw smell of ginger garlic paste goes away. Mix the chicken well. Next again make a pocket in the centre, add the tomato puree.
    (Tomato is pureed with coriander leaves and fresh green chillies)
  5. Let the tomato puree get cooked for sometime. Keep flame medium. As tomato is cooked, mix all well.
  6. Now cover and cook the chicken. Keep the flame slow. Add water as and when required. Do not add lots of water. Add as much water that, our chicken must get coated with the masala well.
  7. As you find the chicken is cooked well, add fresh curry leaves. Slit fresh green chillies and add that too. Add chicken masala. Mix.
    Now add little water and let all cook at slow flame for sometime till the flavours of green chilli and curry leaves get combined with the chicken.
    Adding curry leaves and fresh chillies, towards the end, adds immense flavour to the chicken masala.
    Continue cooking till you get that perfect consistency. Switch the flame off.
  8. Cover and keep.
    Let the chicken masala settle for sometime.
    It is now ready to serve!! Transfer into a serving dish.
