- 500 gm Chicken
- 2 cups Basmati Rice
- 3 cups Water
- 2 large thinly sliced Onion
- 1 Tomato
- 4 slit lengthwise Green chilli
- 3 tblspn Ginger Garlic Paste
- 1/2 cup Mint leaves-
- 1/2 cup Coriander leaves
- 2 tsp - adjust Red Chilli powder
- 1 tbsp Biryani Masala / Garam Masala
- 1 tsp Turmeric powder
- 1 tbsp Coriander Powder
- 1 tsp Cumin powder
- 1/4 Tsp Fennel Powder
- 1 cup Thick Unsour Curd
- 2 tbsp Cashew
- 2 tbsp Raisins
- 3 tbsp Ghee
- 3 tblspn Oil
- 1 tbsp Lemon juice
- 1-2 drops - optional Kewra Essence
- For Whole Spices
- 1 Bay Leaf
- 5 crushed Cardamom –
- 1 tsp Cumin Seeds
- 1 tsp Fennel seeds
- 1 small stick Cinnamon
- 1 Star Anise
- 5 Cloves
- 1/2 tsp - adjust Peppercorns
Steps to make to make Easy Chicken Biryani
- Wash and Soak the basmati rice for 30 min, drain excess water and set aside.
- In a pressure cooker heat oil and ghee, Fry cashews and raisins until golden brown. Drain them and keep it aside.
- Add all the whole spices and allow it to splutter
- Add in the onion, green chilli and saute over a low heat until onions turn brown
- Add in ginger garlic paste and saute for a min.
- Add in tomatoes, spice powders, coriander leaves and mint leaves. Mix well.
- Add in curd and mix well. Add in the chicken pieces and saute for 10 mins till the chicken is well coated in the masala.
- Add in Basmati rice and combine well. Pour 3 cups of water and season with salt and mix well. Add Kewra essence
- Now bring this mixture to a boil and reduce the flame, cover the pressure cooker and cook for 1 whistle, simmer and cook for 15 mins. Switch off and let the steam release by itself.
- Once cooked, open the pressure cooker and fluff it with a fork. Add lemon juice and mix well
- Serve hot with raita
